Bideford · cutting since 2011

Cheese weighed, wrapped and written on by hand.

Twelve lines on the slate this fortnight, from nine farms inside forty miles of the Torridge. We cut to the gram, fold it into waxed paper, and write the date on the outside in pencil.

  • Chilled post leaves Tuesday and Thursday
  • Devon & Cornwall £4.50 · rest of UK £6.95
  • Free over £60, no code needed

Under the shop

A stone room at eleven degrees, and somebody turning wheels.

The cellar runs the length of Bridgeland Street. Wheels come in young from the dairies, go onto spruce boards, and get turned and brushed until they are ready. Nothing leaves early because a weekend is busy.

  • Turned by hand every fourth day
  • Brushed with brine, never waxed shut
  • Tasted before it goes on the slate
  • Cut the morning it is sold or posted

Three steps

Tell us, we cut it, it goes in paper.

No basket, no checkout. You send a note or come to the door, and a person answers it.

Step one

Say what it is for

Six people and a bottle of red, or one person and a Tuesday. We would rather hear that than a list of names.

Six people · £40 · no blue, one goatCollect Saturday before noon
Step two

We cut and price it

You get back a written list with the real cut weights and the real total, before anything is wrapped.

Rafter Reserve 220 g — £7.92Torridge Blue 180 g — £5.76Hartland Tomme 210 g — £6.09
Step three

Paper, string, pencil

Each piece is folded into waxed paper, dated on the outside, and tied into one parcel. Collect it from the rear yard on Bridgeland Street, or we post it chilled on Tuesday and Thursday.

Tell us the number of people and the budget.

We will write back with a board, the cut weights and the total. Usually the same day, always before we cut anything.
